BAKING TODAY:

COCONUT BISCUITS

Makes about 30

1 cup SR flour
1 cup coconut
3/4 cup sugar
125g butter, melted  (4.5 ounces)
1 egg, beaten

Blanched almonds and glace cherries for decoration if you wish

Combine flour, coconut, sugar. Add melted butter and egg, mixing well. It can take a while as there seems too much dry ingredient, but keep going and I tend to use my hands at this point. 

Pick up about a heaped teaspoonful of mixture (it's quite sticky), roll it on your hands and place balls onto a lightly greased tray. Gently press each with the tynes of a fork.

Decorate each with an almond or half cherry if desired.  Bake in a moderate oven about 10 minutes or until golden. Cool on tray.

The decoration can be left off completely and, if liked, the mixture can be shaped into small balls and tossed in extra coconut before baking.

One time, I made larger biscuits and they were lovely so you can make as many or as few as you like, just bake until they're golden brown.  They're very soft when they come out of the oven so leave them to cool on the tray before moving them.
